Well to start with, we're thankful to be settling in at the Horizon Suites Hotel. Each set of us (2-3 persons) has a charming apartment equipped with clean, functioning plumbing, t.v., frig & 2 burner hot-plate, and a drop-dead view of Tolo Harbor.
We're preparing to leave soon to journey to Chinese University of Hong Kong where we'll all share an abundant buffet meal, sans turkey. I told the students to remember that the pilgrims were trying out new, "native" dishes at that fabled first Thanksgiving. So too we will feast with unfamiliar foods. That said, Thomas and Wrick did have a packaged turkey meal from the grocery store for lunch and I enjoyed a bakery roll with cranberries and flaxseed. Maybe next year I'll try a Chinese inspired cranberry sauce.
Last night we watched the spectacular light show in the main tourist area. Then Thomas made his way home with some students while Wrick and I had time to visit with Greg and Mary Steeber, here for a few days visit with their daughter and a trip to Thailand. I'm very grateful for that hour of conversation, touching base with friends, and being reminded of much that we hold dear. It was grounding and nourishing.
